The Schiava is the most widely-grown red wine in the Dolomite
region. Presumably, this vine came to the country during the time of the
Longobard invasions. Here, even various sub-varieties of Schiava can be
found and so for this reason, this vine is considered to be autochthonous.
The grape is at its best if grown on light and warm land from glacial
and alluvial deposits on porphyry rock - a specific feature of the vineyards
in some Dolomite valleys.
With pergola cultivation, the work on vines can only be done by
hand. The terrain as well as the way of training vines over pergolas do
not permit the use of heavy machinery. Therefore, the grapes have to be
picked by hand.f
